best operating temperature is an even one, air cooled is hard to say as Ive never seen one documented. Only seen operating temperature listed for water cooled bikes.

My oil runs at around 100-110, not sure if optimum but it still works fine :)

From what I have read, oil needs to be over 100 to keep any water out.

Engines run more efficiently the hotter they run. Evans NPG+ says when running it in trucks you can run them hotter to get efficiency benefits, but I think you get more NOx and carbon monoxide as the engine heats up (although if they are more efficient, maybe that is relative).
