Having looked at my current situation - no garage, limited funds, inexperience and a desire not to fuck up my gixxer - I thought I might take on a more realistic project for a beginner.
What do you reckon?
Got any ideas?

it's a 250, and it was my learner bike. I kept it for my offspring to learn on. Was going to lend it to my son, but he's taking forever to get his Ls.
It's sitting here, only being ridden to keep it going and rego'd, and I noticed there's guys playing with 250s. This'd be a good bike to use as a first project - still a learner bike, so to speak.

Go for it. I am encouraging my wife to spend time with me out in the shed (Yes..I do enjoy her company in the shed.) and she has started doing little bits and pieces on her little GN. Bars, indicators fork seals and such just to tinker and learn a bit more about what makes the bike go and stop.

The choice is yours really Bron. If funds are limited and your gixer isn't your ONLY transport, would it not make more sense to do the gixer as you can guarantee if you do this one you will do the Gixer also - i.e. paying for two fighter conversions instead of one! If the Gixer is your only transport then go the small one as once you start the project it will be off the road for a little while.

That's the shiz Hillsy! I'd feel more comfortable doing something like that with the gsx since I'm really a rank beginner, and I kinda think that this little baby deserves a make-over. Plus, there's all your build pics for guidance. I love that open look!
Would the GN or GS tank fit okay? I prefer the look of that tear drop shape. Dunno whether I could build a seat from scratch though

Morrigan! 2 words, BUILD IT, doesnt matter which one, the 2fiddy looks fucking awesome as a cafe racer so im hoping you do that!! Dont have a shed? Tools? Welder? Find yerself a nice bloke like Bullfrog and not only will he show you how to build it, he will be there to hand you spanners, wipe your brow and get you warm cups of liptons finest.. Or you could just do it yourself.. your call..

Either Cafe racer or I reckon a Flat-tracker look. Either of those means stripping the bike and shedding some weight which will help the 250 with performance. Make it light and nimble and fun to ride.
Think of it more as a corner blaster than a drag machine.

Cafe racer. I have a cb400 (hiding in a mates backyard) that I'm planning to convert to a racer eventually. Old classics just suit it so fucking well.

If you want to get rid of it and run pod filters like the cafe racer above then source some pod filters first.

You might even get away with cheap universal ones? can anyone with that size engine and era bike elaborate?

Seems Rocket Industries is a hit or miss kinda place. I got the same "Nah" bloke on the phone first time and then the second time got the most helpful bloke ever! It's a lucky dip!

..CV carbs dont like pods as i found out on my 900honda,,,,see if you can get a couple of early slide carbs to fit it ill send you some data later, then the pods will work better [ive an early data book inhere somewhere ur bike wil probably be in it i reckon ] what are those carbs on it 28mm ?

Manual says 30mm
