Need some help. Don't even know if it's possible but want to hook up my temp sensor signal to my acewell 2853 fuel gauge display.
The gauge shows full at 0-10 ohms and flashes empty at 91-100 ohms.
Temp sensor @50 degrees is 9.18 - 9.94 kilo ohms.
@80 degrees is 2.50 - 3.06 kilo ohms.
@120 degrees is 0.65 - 0.73 kilo ohms.

Is there some way to modify the sensor signal so it will play nicely with the gauge?

Yes you can, an early zx6R, zxr750, zx7r or zx9 sensor work well , & have about the right resistance

will it mess with the radiator fan coming on if i swap the sensor? My bike is a 2000 zx9r

You're looking at the wrong sensor, the one on the radiator is the fan switch, there's another sensor on the back of the engine on the thermostat housing, hook it up to that & it will work, you have to get the bike up to operating temp & see how many bars a lit up so you can see what's the 'normal' reading.
