For vastly improved handling & braking I'd fit up a complete RWU GSXR 1100 J/K front end - 1100s are longer than 750s but still shorter than the originals so they steepen the rake & speed up the steering - you'll get a 17" wheel (endless tyre choice) 4 piston calipers, 300 - 320mm discs, cartridge forks (RWU) & adjustment for preload & depending on which model you use, compression &/or rebound damping adjustability, stick a steering damper on for insurance too.
As I'm sure you know, nobody wants the RWU Gix front ends so they can be had really cheaply.
Stick an ally GSX swinger on for looks but you should brace it because they are more flexy than the stock steel job. Or brace the steely, or use a Slabby/Slingy GSXR 750/1100 (750 to 1100 are different lengths) swinger & get some shock mounts welded on.
The rear 17" x 4.5 or 5.5" wheels go in with minimum mods (you'll need access to a lathe for making spacers) & the Gixer rear brake system is easy to fit as well. A decent set of Koni, Marzocchi, Hagon, etc shockers that are 25 - 40mm longer than standard (or make some shock risers) to increase the rear ride height which also compliments the front end swap.
Stick a 1000 motor in it, some 34mm GSX or 36mm Bandit CV carbs with pods, use the 1000 electronic ignition, keep the 4 into 1 that's already on it & a 530 chain conversion to reduce the huge amount of mechanical drag the std 630 creates.
Keep the standard fueltank & sidecovers, Gix front guard & a single seat tail unit of your choice (900ss Duc units look really good on these things & still look oldskool.) Mini indicators, smaller dash unit & mirrors, flat drag bars, Wes Cooley Replica blue & white paint scheme with or without the bikini fairing.
Do all that & you'll have a tough as nails, grunty, stylish oldskool 'Fighter that will handle & stop well enough to keep up with much later model stuff without costing the earth.
Go nuts Dave & don't forget, money's no object ;)
Keep us posted all the way too. [:p]

thats what i am thinkin but will put some 18" wheels on it from a GSXR1100 88 model or 87 model 750 then a GSX1100 alloy swinger and forks off an 87 model GSXR750 and a set of protaper style bars on it so what do you guys think ;):D

Get some "Raask" or similar Rearsets. you probably will not be able to do much in the way of front brakes, unless you do a complete front end upgrade. i tried fitting some four spots to my kwak GT-750 and the wheel fouled on the caliper.

put a highrise pipe on it, or a vance and hines megaphone, some pods and a big bore kit, Wiseco kits can be had fairly cheap from the states, i found it was cheaper than oem oversize. take it out to over 800cc 10.25:1 cr stock.
