Going through a protracted claim with Australia post atm, and I was wondering about this.

What are the measures Australia Post has in place to stop posties/contractors from just taking parcels for themselves and putting a random signature on the electronic signature thingy?

None whatsoever.
It takes several complaints from the public before an investigation is started.
