Why not make your own out of 5 mm Ali plate ? Then all you need is bolts with a longer sholder.

thats my next option, just thought it would be easier to cut the center out
of an old carrier, and the ducati and aprilia disk bolts dont have a shoulder
which i thought was wierd.....

Not really a supprize they don't, by rights no brake disk should "Need it" as the clamping force of the bolts should provide enough friction between the disk and the hub to not move anyhow. Alot of manual cars run high tensile flywheel bolts with out a sholder, and the forces there are far higher than a motorbikes disk will see. 1.3 g is about it for max decelleration on a bike , the impact force of someone dropping the clutch on a manual v6 at standstill and 5000 rpm would be very significant !

Still you will need longer bolts to give you enough thread to bite into the hub.

Some Yamaha discs are the same fitment as the Aprilia/Ducati discs
