According to the rad TV series Dexter it's called Crypto Taxidermy which is making a stuffed animal out of several different species to create something that never really existed. The Platypus was widely believed to be an example of Crypto Taxidemy for about 40 years until someone bought a live specimen back to England. I saw a good one last year that was mostly rabbit but had massive claws and oversized fangs. But the fish in the piccy is way cool.
