1999 zx9 ideas please

Hi guys I have just bought a 1999 zx9 thats 100% stock and would like to do a few things to it.. i would like to chop the 2nd seat off and put a set of dirt bike bars on and get a slim head light.. just wanted to know what people do for speedo's and also is there any tuning issues after taking all the fairings off?? e.g dead spots or running to lean?? i'm super keen to start working on it and having some fun.. this is a pic of my bike.
